Yes, Original Saffron threads when dipped in Water or Hot Milk will turn White/Light Orange/Opaque after certain period of time. It can be few hours to few days.

Saffron Threads Colour Release time in Water?
Hot/Boiled Water- Saffron Threads will start releasing its colour in Hot Water immediately.
Cold Water- Saffron Threads may release some color immediately but full colour can come in 10-30minutes.
Even 1 Saffron Thread can make full glass of water yellow which is not possible with Milk.
 
People confuse Youtube videos, Google information which is incorrect regarding Saffron Threads colour release time. 
Original Saffron Threads can release colour within 1min-30min of dipping in water depending on Saffron Threads Quality, Crop Age, Temperature of Water, Moisture, Climate. It is observed that Saffron Threads release colour time vary according to temperature like in summers it gives colour quicker than winters.
 
Saffron Threads Color release time in Milk?
Cold Milk- When you dip Saffron Threads in Cold Milk, it may not give colour at all or will take lot of time. So, it is not recommended to dip in cold milk directly.
 
Hot/Boiled Milk- It takes approx 2-3hours for release of colour in Hot/Boiled Milk. 
5-6 Threads - Very Light yellow color for a glass of milk.
10-12 Threads- Light yellow to Normal Yellow color for a glass of milk.
12-20 Threads- Yellow to Very Dark Yellow color for a glass of milk.
 
How to Store Saffron Threads?
It is recommended you keep Saffron Threads in Cool climate at all times. You can keep it in Fridge but protect from moisture.
It is recommended that you consume saffron threads within 3-6months of purchase to maintain freshness.
 
Do Saffron Smell/Aroma changes?
Yes, Saffron Threads Aroma changes with passage of time. Like at time of Harvest its aroma has sweet smell but after 3-5months it becomes hue type in nature.

My Saffron is turning Yellow to Light Orange. Is it Original?
Yes, it is Original. Like any other Food item Saffron Threads will continue to loose its colour naturally like from Deep Red to Red, than yellow. Sometimes process may be slow due to better quality and storage and sometimes fast due to poor storage.
